    The holidays! My Fave!

    I just looooove the Holidays…..even more after the last year and a half! I appreciate life soooooo much more than ever. I did before, but now, way more. And with loving the holidays and all it’s wonderful decor and music and warmth, comes FOOD! FOOD = HOLIDAYS! Right?

    I am excited to bring good old fashioned and much healthier Gluten-Free baked goods to my community. I know what it’s like living and watching all around you eat all the amazing holiday food and treats and not being able to participate in much of it. Not me personally-watching my babies. And my husband. In a culture and time of year where life is centered on food, all must be able to safely and happily enjoy. Without fear or question.

    I am happy to be offering a GF holiday dessert menu as well as every Saturday bringing fall treats to the market. All the while still offering birthday cakes and special orders 7 days per week.

    I thank everyone for all of their support and with your continued love and support, I hope to continue growing and to be part of your families for years to come.

    Low carb anyone???? Yes!

    First, Happy Wednesday! What a day so far….busy but good. I planned on working solely on QuickBooks and managing my site but Costco called (because I needed ingredients and food for the house) and of course, recipe testing called even louder!

    I had many people ask me at the farmer’s market if I had low carb and/or dairy free items. I hated having to tell them that I did not. Hence, I made it my mission to make a few things for them to try this weekend (as well as for my taste testers to judge today and tomorrow.)

    I just made a GF, almond flour, and dairy-free choco chip cookie. And I have to tell you-it’s pretty darn tasty. Compared to whole grain flours, almond and coconut flours literally have a fraction of the carbs they do.

    I cant wait to see what everyone thinks. I’m assuming this is a treat for those on the Paleo diet? Maybe even Keto? Used honey as a sweetener. Will have to check this out.

    Happy New Year…

    I love new beginnings. Especially the New Year!!! The perfect time to start what you’ve been putting off, to change the things you’ve been wanting to change, and to just start fresh. I love to reorganize and straighten up, throw things away, and add new and exciting dishes/recipes to my family’s life. I looove trying new menus but I also love making the old better and healthier and just freshening things up. I become obsessed with making the “bad” healthier while still being delicious. And I love creating new goodies and meals just like an artist would take a blank canvas and paint whatever he feels/strikes him that day.

    I was just looking through a magazine while getting my hair done (Cooking Light) and came upon a recipe for “Tuna Casserole”-our FAVORITE casserole. I’ve done the same boring recipe for years, and have thankfully been blessed with GF canned Cream of Mushroom to make it easy, as Tuna Casserole should be. But I’ve always wanted to make my own sauce/soup and change things up a bit but my creativity would not allow me to get there. Until today. This recipe looks delicious and comforting and REALLY homemade. I am going to try it. Of course, I will tweak to make it Gluten-Free….as I always promise everyone, ANYTHING CAN BE MADE GLUTEN-FREE. Don’t feel like a Gluten-Free magazine is the only way to get recipes. You can change anything to be GF with a little passion. 😌

    I’m attching the picture if you’d also like to give it a shot. I can’t imagine we will be disappointed.
